Aunt Nell’s Apple Crumb Pie
My aunt Nell was my Grandma Jenner’s sister, my father’s aunt. So, technically, she was my great-aunt but I’m not big on formality. She was a great cook and a great example to me and everyone she touched. Like my grandma, she was a teacher, one of few professions that a woman in those days could claim. I still have some of the books she gave me when I was a kid, books she used in her classroom. Like the woman who gave them, they were playful and fun-loving. And her food and her recipes reflected that. She made this pie for me and my family when we went to visit her in Chula Vista, CA. I was a teenager then, but very interested in cooking so I asked her for the recipe. I am so glad I did. It is one of the few recipes I have of hers. I have made this recipe several times and it was a hit with my children. I know it will be with your’s as well. So, without further ado, here it goes.
Aunt Nell’s Apple Crumb Pie
5-7 tart apples or two #2 cans (5 cups) sliced pie apples, drained
1 9-inch unbaked pie shell
1/2 cup granulated sugar
1 teaspoon cinnamon
1/2 cup granulated sugar
3/4 cup all-purpose flour
1/3 cup butter
Pare apples; cut in eighths. Arrange in unbaked pie shell. Mix sugar with cinnamon; sprinkle over apples. Mix sugar with flour; cut in butter until crumbly. Sprinkle over apples. Bake in a hot 400 F oven 40 minutes or till done. Cool. Spoon whipped cream atop; sprinkle with cinnamon sugar mixture.
